An exciting future for F&B and hospitality in Vietnam awaits

On 7 August 2023, RMIT students hosted the only Michelin-star chef in Ho Chi Minh City, Peter Cuong Franklin, for an exclusive discussion.

Peter is the chef and founder of several reputable restaurants, including Anan Saigon. Recently, Anan Saigon has achieved a remarkable milestone, being the first and only one Michelin Star in Ho Chi Minh City listed in the Michelin Vietnam Guide 2023.  

The chef visited RMIT Saigon South campus and shared his precious F&B and entrepreneurship experience with the students.

Peter said: “My journey, from being a Vietnamese refugee, venturing into many diverse fields to a chef now, has taught me the power of adaptability and quick learning. In the modern world, we need thinkers, problem solvers, and creators, not just followers of recipes.  

“Whether in the kitchen or any other domain, having an open mind and the ability to turn challenges into chances to excel is crucial. Every day, we seek to make the ordinary extraordinary, adding that 'wow factor' to everything we do”, he emphasised.

Drawing from his experience as a Michelin-starred chef, Peter also provided significant perspectives on this subject: “To create Michelin-star level dishes, one must experience the environment firsthand, understanding the essence of fine dining. 

“Vietnam's food scene has evolved, and it's time to showcase not only our renowned street food but also the second tier of high-end fine dining. The two can coexist, supporting each other in the hospitality and tourism industry”.

Peter explained: “With the arrival of Michelin in Vietnam, a new generation of talented Vietnamese chefs is emerging, ready to take on the challenge. Just like Singapore and Thailand's culinary growth, we are poised for a thrilling journey as the market develops and more stars shine in the Vietnamese dining experience. 

“The beginning sparks an exciting future for F&B and hospitality in Vietnam." 

Anan Saigon’s chef and founder also pointed out: “We need to understand the environment in Vietnam and the global context. That's where RMIT and its students are very important - to connect and develop those things, so that we can create a very dynamic tourism and hospitality”.

The event demonstrated RMIT's unwavering commitment to providing world-class experiences as the leading international university in Vietnam. Approximately 90 students participated in the event and acquired insights from the Michelin-accredited chef.

Xiong Chang, an RMIT Tourism and Hospitality Management student and served as the event’s emcee, shared: “I think, the key inspirational point of Peter's talk was that it is never too late to follow your dreams. 

“No matter what stage of life you are in, all of your previous experiences will definitely help build and shape how you approach your level of success.”

Dr Jackie Ong, RMIT Senior Program Manager of the Tourism and Hospitality Management program, believes that “these invaluable sharing serves as a driving force, motivating RMIT hospitality and tourism enthusiasts, particularly those who are deeply passionate about the vibrant F&B industry”.
